Slow-Cooker Granola

This is a great granola recipe for when you don’t want to worry about burning the granola or heating your house up with the oven.  It is healthier than most store-bought versions and you can control the ingredients.


5 cups old-fashioned or thick cut rolled oats (do not use quick cooking, they are too small and flaky.)

1 cup any combination of nuts or seeds

2 cups any combination of dried fruit or berries and unsweetened coconut

1/3 cup sesame seeds

1/3 cup flax seeds

2/3 cup maple syrup

1/4 cup canola, sunflower or safflower seed oil (or any other mild tasting healthy oil)

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

pinch of salt

Combine all the ingredients in a lightly oiled 4-quart slow cooker (I use the big oval one) and stir to combine.  Cook on High for 1 1/2 hours uncovered.  Stir occasionally to cook evenly.

Reduce the heat to low and cook uncovered for up to 2 more hours until the granola is lightly golden, crisp and dry.  Stir occasionally.

Spread the granola out into a large, shallow pan and allow it to cool completely.  Store in an airtight container for up to 2 weeks.
