Oat-Fruit Bars

These bars are quick and easy to make, and are much healthier than most of the snacks at the grocery store.

Oat-Fruit Bars

1 ½ cups whole wheat flour

1 ¼ cups quick oats

¼ cup brown sugar

½ tsp baking soda

¼ tsp salt

½ cup maple syrup

¼ cup canola oil

1 ½ cups low sugar fruit preserves or thick fruit butter like apple, prune, or peach

Preheat oven to 350.  Lightly oil sides and bottom of a 8 inch square baking pan.

To make crust, combine flour, oats, sugar, baking soda and salt in a large mixing bowl.  In a small mixing bowl combine maple syrup and oil.  Pour into the flour mixture and mix thoroughly.  Mixture will be crumbly.

Press half of mixture into the pan, packing it down firmly.  Spread the fruit on the top. Sprinkle the rest of the flour mixture over the top and press down lightly.

Bake for 20-25 minutes, until lightly browned.  Cool on a wire rack and slice into bars or squares.  Wait 3-4 hours before trying to serve to give the bars time to set.  Otherwise they will crumble up when you try to lift them out of the pan.  Store in an airtight container.
