In Micheal Pollen’s new book, In Defense of Food: An Eater’s Manifesto“>, he sums up how we should be eating in seven words: “Eat food. Not too much. Mostly plants.”

Eating unprocessed food, low on the food chain, is healthier for both our bodies and our planet for numerous reasons.  It can be fun too.  There is no need to be restricted to salads for the rest of your life if you give up meat.

I am not a vegetarian, but I have been trying to reduce my meat consumption for the past few years.  I had quite a set back when I was pregnant and craved hamburgers and sausages, and nursing definitely makes you hungry, but I am getting better about it again.  I haven’t eaten dairy or beef for over a year due to my son’s allergies, now I just need to cut back on my pork intake.

Starting next week I will be posting about various fruits and vegetables.  I will be presenting you with fun facts, nutrition and health information, and preparation ideas.  I encourage all of you to post comments sharing your healthy recipe ideas too for each food.  Together we can help each other eat more fruits and vegetables without feeling like we are sacrificing anything by reducing our meat intake.  Those of you who are vegetarians or vegans this is a great opportunity for you to expand your food options as well.
