Want a cheap and easy way to make your favorite lasagna recipe about a gazillion times healthier?
Open 2 cans of cannellini (white kidney bean) or other white bean or cook 1 cup of dried white beans. Drain.
Put the beans in a food processor with about 1-2 tablespoons of olive oil, some parsley, salt and pepper and some basil or oregano if you like. Puree everything together.
Use the bean mixture in place of the riccotta and other cheeses in your lasagna recipe. Top the lasagna with bread crumbs to give it a nice golden crust.
Trust me, it’s good. I hadn’t been able to eat lasagna for over a year and was really craving it. I thought up this to make a cheese-less one, and both my husband and I loved it. We didn’t miss the cheese at all.
