Yesterday I got a flower shaped silicone cupcake pan. Beck saw it and immediately wanted to make “pupcakes.” So this morning I whipped up some apple-oatmeal pupcakes. Don’t worry, they’re vegan.
1 1/3 cups white whole wheat flour
3/4 cups rolled oats
1/3 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons Ener-g egg replacer
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger powder
1/4 teaspoon salt
3/4 cup plus 2 tablespoons rice milk
1/2 cup oil
1 apple diced
1 teaspoon grated lemon rind
Preheat oven to 400*. Grease cupcake pans.
In a medium bowl combine flour, oatmeal, sugar, egg replacer, baking powder, salt and spices. In another bowl combine rice milk and oil.
Add the wet ingredients to the dry ingredients and stir just till combined. Stir in the apple and lemon rind.
Spoon mixture into muffin tin. Bake at 400* for about 20 minutes. Cool on a rack for 5 minutes then remove from tin. Serve warm or cooled.
