This has got to be one of the simplest salads out there, yet it is pretty and tastes good.
1 cucumber, peeled and sliced into thin rounds
1 carrot, peeled and grated
1-2 teaspoons seasoned rice vinegar (or another mild vinegar with a pinch of salt and sugar added)
Sesame seeds to garnish
Toss all the ingredients together and serve. You can let it sit for a 10-15 minutes to let the flavors meld if you like.
